In honour of the 30-Day Paleo Challenge currently currently underway, I thought I would post another good recipe from Lisa’s Nutrition Blog.  Some mealtime variety will come in handy over the month ahead!
Paleo Meatloaf
2 lbs. Grass Fed Ground Beef (or ground turkey)
4 Eggs

Paleo Recipe - Strawberry Rhubarb Crisp

Stacey’s Strawberry Rhubarb Crisp

Recipe courtesy of Stacey Deering (From OPT’s Newsletter)
Base:

6 cups rhubarb chopped

2 cups strawberries sliced

2t vanilla

2T arrowroot powder

1/2 cup honey, warm if necessary to mix easier
